Cavendish Farms' newest frozen potato processing plant is officially open for business in Lethbridge.

The facility replacing the previous plant was unveiled Thursday, October 3, spanning the size of seven football fields in need of 735 million pounds of spuds annually.

This is an increase of almost 12,000 acres over what Cavendish Farms currently contracts from local growers, according to a release from J.D. Irving Group Companies, which Cavendish Farms is a part of.

They say the plant nearly triples production capacity.

Alberta Premier Jason Kenney was at the ribbon cutting event, and says the new plant is a vote of confidence in Alberta.

"Alberta's food processing industry is growing in size and sophistication, and will be a key part of our government's strategy to expand Alberta's economy and create more."

The $430 million plant will employ 238 people, and marks the largest private sector investment in the City of Lethbridge history.
